Make this simple Caesar Salad with crisp romaine, crunchy croutons, fresh lemon juice, and a creamy Caesar dressing. A simple, restaurant-quality salad that’s easy to make and bursting with bright, bold flavor.

Method
- Chop the Romaine lettuce into bite size pieces.
- In a large mixing bowl combine the lettuce, pepper and salad dressing. Toss the salad to lightly coat the lettuce in dressing.
- Zest the lemon and add juice to taste. Top with croutons and parmesan cheese.

- Mix all the ingredients until they are evenly dispersed.

Notes
- Zest first, then juice: It’s much easier to zest a whole lemon than a cut one.
- Only the yellow: Avoid the white pith—it’s bitter and will throw off the dressing.
- Microplane > grater: A microplane gives fine zest that disperses evenly without harsh chunks.
- Add in stages: Start with a small amount (½ tsp), taste, then adjust. Zest is aromatic and can overpower.
