Ingredients

Salad
  • 3 heads Romaine Lettuce
Dressing
  • 12 oz Caesar Dressing
Toppings
  • 5 oz Croutons equal to one bag
  • 1 whole Lemon used for the juice and zest
  • 1 tsp Pepper
  • 6 oz Shredded or grated Parmesan Cheese equal to one bag or 1/2 a block of cheese

Method

  1. Chop the Romaine lettuce into bite size pieces.
  2. In a large mixing bowl combine the lettuce, pepper and salad dressing. Toss the salad to lightly coat the lettuce in dressing.
  3. Zest the lemon and add juice to taste. Top with croutons and parmesan cheese.
  4. Mix all the ingredients until they are evenly dispersed.
  5. Chow's Up!

Notes

  • Zest first, then juice: It’s much easier to zest a whole lemon than a cut one.
  • Only the yellow: Avoid the white pith—it’s bitter and will throw off the dressing.
  • Microplane > grater: A microplane gives fine zest that disperses evenly without harsh chunks.
  • Add in stages: Start with a small amount (½ tsp), taste, then adjust. Zest is aromatic and can overpower.
